GINGERBREAD COOKIE CUPCAKES

Serves 12

Ingredients
CUPCAKES
180g Light Brown Sugar
180g Soft Butter
180g Self Raising Flour
3 Large Eggs
2 tsp OMG Gingerbread Cookie Blend
1 tsp Vanilla Extract/Flavouring
BUTTERCREAM
200g Softened Unsalted
Butter400g Icing Sugar
2 tsp OMG Gingerbread Cookie Blend
1 tsp Vanilla Extract/Flavouring
Method
1. Preheat oven to 170oC fan and line a cupcake tray with 12 large cupcake/muffin cases
2. Beat together the Soft Butter & Light Brown Sugar until smooth
3. Add in the Vanilla Extract & eggs one at a time, until they are fully mixed
4. Whisk in the Self Raising Flour & OMG Gingerbread Cookie Blend until smooth
5. Divide evenly into the cupcake/muffin cases & place in the oven to bake for around 20-22 minutes, until golden brown
6. Remove the cupcakes from the tray & leave to fully cool
7. To make the Buttercream, firstly beat the softened Butter until smooth
8. Sift in to the smooth butter, the Icing Sugar & OMG Gingerbread Cookie Blend
9. Now add the Vanilla Extract and beat together until smooth
10. Using a piping bag or utensil add the buttercream on to the cupcakes and finish with decorations & toppings of your choice. Enjoy!
